Back of the Burner Interviews Big Ol' Kluckr Mark Gilmor

What were your favorite foods growing up?
Actually my love of wings came in the form of punishment. If I said a bad word when I was young, I would get a teaspoon of Tabasco instead of soap. That's where the love of spice began. By the way, I curse like a sailor.

When did you have your first taste of wings?
College...it was our staple diet at about 2 in the morning.

Where did you come up for the idea for Kluckr?
I watched guys have the same argument over and over again. "I had the best wings last night at XYZ bar." "No
that's not the best place. The best place is here." If there were four guys in the conversation there would be four different answers.

If you didn't become a wing connoisseur, what would you be?
Healthy.

Tell us a little more about the Kluckr App. What does it do?
It's an iphone app where people that love wings can locate rate review or add their favorite wing locations. Nothing is worse than arriving to a city and not knowing where to get some good wings. And I have 25,000 people that will back me up on that.

Do you ever make wings yourself?
At home I am trying to perfect the healthy boneless wing. It's a combination of making great chicken cutlets(thank you Ina Garten) and adding a terrific sauce that will hold on the cutlet, and then some high quality blue cheese. This might be my heaven.

If so, how exactly do you go about making them? Are they better baked or fried?
3 Bowls
First Bowl -1 cup Flour and 2 tablespoons Montreal Steak Seasoning( I swear this works)
Second Bowl- Whisk 3 eggs
Third Bowl- 1 cup 4c Bread crumbs or Panko and 1/2 cup Parmesan cheese.
Fourth Bowl- Melinda's XXXTra Hot sauce. Be prepared to use the bottle...

Pound cutlets to no more that 3/4 inch thick and heat 1/4 cup olive oil in large skillet. Cut into thin strips 4 per cutlet. Dip in Flour mixture then egg mixture, the bread mixture. Cook for 4 minutes a side. Then dip in to hot sauce mixture.

If you are lazy...which sometimes I am, I recommend Bell & Evans Chicken Tenders. And continue to the hot sauce. Prepare to be very happy. These are very good lightly fried.

Which place has the best wings ever?
Frankly, there isn't just one place. That's the glory of wings. There are so many nuances that make a wings great for different people. Some like them extra crispy, some like them wet. People use Old Bay on them in Maryland or Jerk Wings from Jamaica. That's what makes the app so fun.

When you're not eating wings, what do you eat? Whatever will make up for the wings I just ate!

What is your least favorite food?
Any seafood currently being fished near the BP Deep water drill platform. Oh and mushrooms (Yes, I know it is strange...)

What is your beverage of choice?
Malagro Silver Select Reserve Tequila on the Rocks. Wow...it is so good but hard to find.

What are some recent wing trends you have been observing?
Mass market wing joints are sprouting up everywhere and are in craze. This has raised the level of awareness of wings everywhere, which in turn, I believe, is raising the level of quality and diversity. We will see better and better products out of this niche.

What is your best cooking tip for a home enthusiast?
Quality products make a quality product. Don't scrimp on anything you do.

What do you eat when you are home?
Marinated meats & plenty of veggies.
